The following has just been posted on the Great War Forum.
http://1914-1918.invisionzone.com/forums/index.php?/topic/230224-donald-peddie-gordon-highlanders/

The man named Donald John Peddie on the war memorial at Stirling is my grandfather. He served in India from 1917 to 1919 and died at the Western infirmary, Glasgow of a tropical disease contracted in India. The family have a great deal of correspondence from him whilst he was on active service. He volunteered to serve in India to release Imperial troops for the Western front.

Thanks Ken. Another bit of the jigsaw puzzle! If he volunteered for service in India, that would explain why he wasn't with his "own" battalion. I now know too that he had at least one child.
